  • Got into home brewing in 1995 because, at that time, Central PA was a good beer wasteland. Nothing but domestic and imported pale lagers. I had developed a taste for good beer while in the Army, and wasn't ready to give up, so I went to my library and started reading. That led to a malt extract brewery. After a couple of years, I started brewing partial mashes, then moved to all-grain brewing.
In the beginning of 2000, I talked my way into a commercial brewing job, and I worked as a micro and pub-brewer until the end of 2005.
It took a few months before I felt the itch again. I brewed the odd batch here and there, just for kicks, but it wasn't until the end of 2006, when we bought our house, that I got right back into the swing of things. Haven't looked back!
  • I'm constantly working on new concepts in historical brewing. There are four or five projects ongoing at present.

I do NOT recommend it. It is far too attenuative. 1275 attenuates in the 75% range, which is at
least 5% higher than I prefer. This beer is so, well, mild that you don't really want to exceed
    65% atte...

:mug:I hope you enjoy the finished product! Mild can be described as a lower-octane brown ale.
Flavor can be on a par with less-assertive brown ales like Newcastle, and malt should
    definitely be notic...

I think that'd be awful. But I tell you what - brew it anyway, bottle it, and send it all to
me. I assure you I will dispose of it properly.:DSeriously, that sounds like a beer I'd drink a

I really can't recommend Nottingham because it attenuates too fully. This beer needs some
residual body or it'll end up too thin. Also, Notty tends toward a neutral flavor profile. Some
    yeast esters a...

I just did a Best Bitter with Delta and really enjoyed it. I'd say Brewer's Gold or Delta.
    Brewer's Gold is more "authentic".Bob
