I use a 60qt and 48qt wheeless Icecubes. They are setup w/manifolds. I use a 13" probe

I use a simple copper "H" pattern made from 1/2 copper tubing. Cheap and easy to build. The
upper pipe goes thru the MT lid and is long enuff to be adjustable in height to meet whatever

If you go the fridge/temp controller route, i sell thermowells SS TIG welded, that the
controller sensor goes into which the whole rig monitors core temps.
