    It depends on the strain. The manufacturer will list the alcohol tolerance of each strain. Even
    then it isn't hard and fast, but a good idea of what a yeast is capable of.

    I don't have experience with the 1.75 gallon kegs, but if you think you might keg 1/2 of a 5
    gallon batch, I would go with a 2.5 gal keg. It won't hurt to have 1 gallon in a 2.5 gallon

    The white stuff on top is most likely from the yeast. Depending on how cold it was, it can take
    some time for things to warm up and for the yeast to get going and produce visible signs of
    fermentation...

    Can you tell us a little more about your process? I can't really think of a way a homebrewer
    would be able to filter out the sugars, since they are dissolved.
