So you didn't rehydrate the Notty, assuring you destroyed 1/2 the viable cells instantly. The
other half won't have much hope in such an alcoholic environment (10%+). That was clearly a
    waste.As menti...

Yes, luckily my LHBS was open for a few hours today. He gave me a vial of wlp099 as a Christmas
present:) I'm just gonna wait at least another week. If its still above 1.020, ill let the
    beast yeast f...

Let's agree to disagree:) The Nottingham looks like it is doing its job. I was gonna throw in
pack of champagne yeast instead, but was not sure how it would interfere with the beer's
    profile. Nottingh...

An OG of 1.130 is not an IPA. You've made a Barley Wine or a Hoppy Barley Wine. Call it what
you want though ;)You're already at 10.5%. If you make it to 1.020, you'll be at almost 15%.To
    get that low...

Brewed a huge IPA one week ago. OG was 1.130, pitch a starter that I stepped from 500ml to
1000ml on a stirplate, used WLP001. Heavily aerated. It has been one week. Still bubbling once
    every 5 second...

If you want to make a tripel dry, why bother with anything except the cheapest beet or cane
sugar possible? Go to Aldis and just get the 98 cent 5 lb bag of sugar. That is the "belgian
    way" if I am not...

I wouldn't say whirlfloc is ineffective- it's a widely used tool with clear benefits. That
said, even stone has problems with chill haze that aren't alleviated by kettle finings. In my
    opinion it's mu...

My fermentation temps range from 68F to 78F. I don't have any means of a
continuously-controlled fermenting environment, or a refrigerator for it, so I just keep my
carboy in a 10th gallon Igloo ICE C...

8 pounds of sugar in a gallon is a lot! You won't have a problem at all with 1.5 pounds of
sugar in a triple- that's a small percentage of the fermentables. Using 10% sugar, or even 15%,
    in a thin dry...
