    ABOUT ME

  • Cincinnati
  • Hello:

I am a psychology student at Liberty University and plan to enter a seminary of the Lutheran Church Missouri Synod to become a pastor when done. We LC-MS'ers love a good beer and I know quite a few who home brew. I'll be doing my first home brew in April-May and can't wait. I really want to get into German pilsners and helles, but will hold off until I get an ale or two under my belt and get a fridge to control the temperature.

  • I always wanted to home brew, even since being a little kid. I was raised by my grandparents and my grandfather was a moonshiner in his younger days and I heard all the stories and it got me interested.

I have brewed 3 extract brews so far, a Hefeweizen I am currently enjoying, a Scottish Ale 80 Shilling that had to be tossed due to a serious infection due to a poorly fitting bung, and a Cream Ale from Northern Brewer that is unlike the cream ales we think of around here. I have a sneaky suspicion I won't like it, but it's bottle conditioning now and I give it a go when the time comes.
  • I am doing my first All Grain around July 4th in a fly sparging unit I purchased from Listermann's LHBS here in Cincinnati. I am then going to go his extract Abby Ale extract kit, and Northern Brewers Irish Red extract kit I've had sitting around since April-May.

I've never had skeeter pee, but Apfelwein is the bomb especially aged.

Now see, this is why wine is more suited to me, aging time-tables. I have been accused of aging
my beers too long to be a rational guy. I have an Abby ale I am going to bottle soon that's
    been in a ca...

I made the VH peach and you really don't "press it". Put it in a mesh bag and just squeeze the
bag in your hands. Not a hard task to do at all because the peaches are very soft.OK, at what
    point do yo...

I need to make the transition from beer brewing to small-scale fruit wine making due to health
concerns that don't enable me to lug and tug all that hot water around. I was thinking of
    starting out wi...

Why not kill 2 birds with one stone & mix up the CLR in the pot with the chiller in it? Just
let it soak for awhile. I'm trying to remember if we had to dilute that stuff when we used it
    in the coffee...

I have to admit it guys I have screwed up. I am disabled and cannot clean up the same day I
brew. But last time I brewed was last year or the spring. After brew day was over I put
    everything to soak a...

How long was the beer in primary? If it was a short primary and you racked over too quickly I
could say "possible" yeast clumps. If it was in primary three weeks then something is likely
    wrong.

Thanks guys. I will try this Moosehead Mini-mash clone I have with Kolsch yeast and see what
    happens.

Even though I have a low tech lagering setup I still don't think I am ready to do a lager yet.
My latest issue of the Northern Brewer catalog says you can use a clean ale yeast fermented on
    the low te...

  • Posted in thread: Do you let IPA's breathe before drinking?? on 03-04-2011 at 02:16 PM
Many IPAs will evolve quite a bit as they warm up. I usually drink pretty slowly (I can nurse a
pint for an hour), and I really enjoy how it changes during that time. The actual aroma/flavor
