Matte finishes are pretty easy to apply. The chalkboard paint would be a really cool idea.
Write it really big so no one has an excuse for not knowing what they're drinking!

Don't worry about priming the surface. Just give it a decent sanding to give the new paint a
good surface to adhere to. What kind of finish are you going for?
