Would you say it's important to rack off the current sediment/old yeast and then pitch new
yeast, or just pitch new yeast?

With the extremely cold ground water, I was able to cool the wort down below 80 degrees both
times, I believe. The yeast cake was exactly 4 weeks old. -- I oxiginated the first 2 gallons

So I have a 15.5 barrel recipe that I'd like to shrink down. I divided it straight down to a
5.5 gallon batch, but it came to seem like a lot of grain, close to 16lb total, and less than
4oz of total ...

I'm new to AG, but why would you want plain "top off" water? If you have more room for water,
why wouldn't you add it to the sparge, and use it to help extract the last of the sugars from
the grains? ...
