  • I love beverages, not exclusively beer, and am facinated by the American beverage industry. I have always wanted to learn more about making good beverages.

    I chose beer, however, because good wine is all about good grapes, and whiskey requires you to sell your soul to the ATF. Making good beer is 99% good process. The chemistry facinates me. I love to learn, and it's the chemistry that is really drawing me in.

    So, there you have it. A weekend in Portland this summer hitting up good micro brewers and wine makers pushed me into action. I'm full speed ahead, learning as I go, and having a good time.

    The first batch of this I made turned out awesome. No Williamette dry hop, but the same recipe
    otherwise.My second batch of this is in the keg, and it tastes like straight onion. Terrible
    onion flavor...

    My first batch of Sacred Summit was some of the best beer I ever made.This batch tastes
    terrible.I don't know why the difference is there. Different cultivars of Summit?

    I definately have a batch of onion beer thanks to summit hops. I added in an ounce of pellets
    in the secondary for a dry hop.The funny thing is, when the beer was young, I didn't get the
    onion flavor....

    I have a sulpher small/flavor in my appelwein that mellows over time.I had a bottle that was
    over a year old, and the sulpher smell oder had gone from powerful to completely gone.

    Any chance the pressure release valve will allow external air into the container when presented
