This is why I'm oaking in the primary 1.5 oz and tasting it every few days. As soon as it gets
just beyond what I want...a little strong, I'll rack it over to secondary thus leaving the oak

Thanks. I put 1.5 lbs of honey in there and pitched some US-04. It's at about 63 down there and
it's been bubbling away for three days now. I have some hope that this'll work!

So it it ruined then sitting in my basement for a week at 65?I know some people only use the

I'm really pleased with how Santiam works with a more intense Rye grain bill. I think the
