    I would say you may be too late for the diacetyl rest but if your fermentation was healthy you

    +1. I use a 5g. If its any higher than say 1.065, I just bump up OG with extract and/or sugar.

    Since it looks like you can step your mash I would consider doing 75 at 145 then 15 at 158
