I also had similar issues with a Bourbon Baltic Porter - OG was 1.084, FG was 1.016. I did not
re-pitch, and for that it took 6 months to carbonate. But in the end it was completely worth it

I brew all the time at high summer temps. Start usually around 8am so the brewday doesn't
extend too far into the afternoon heat. Did a double decoction last year when the drought temps

I brew both ways - many times my wife is my brew partner :D; that definitely helps out a lot
when I need help milling, doughing in, sparging, etc. Extra hands are always nice. Other times
I brew alone...
