If you add the oak chips on day 1 of secondary then aren't you risking over-oaking it, or do
you rack it off the oak at some point?

My understanding of the directions is that we should save the oak until after the beer is sour,
and then oak until done. Is that correct? Oak isn't added on day 1 in secondary?
