    forgot to update this thread. It ended up fermenting out in 6 weeks, and it turned out
    amazingly delicious. I went ahead and carbed the whole batch. Everyone that has tried it has
    enjoyed it.

    I was going to rack to the secondary because everything I've read says '1-2-3'..I go by the 4-4
    method. 4 weeks in primary before I mess with it, 4 weeks in bottles before i pop one.

    Saranac caramel porter is such a great beer. I've been wondering how they get such a pronounced
    caramel aroma and flavor. I'm interested to see how this turns out.

    That's excellent thinking ahead, keeping some wort to check the OG when you get a new
    hydrometer! I will be filing this one away in the back of my mind... just in case. :mug:
