    I feel the same way. I put together 1 gallon of Hansen's, 1 cup maple syrup and 1 cup light
    brown sugar with Vinter's Harvest yeast. It's delicious. I'm getting ready to do 3 gallons
    soon.

    It is Hansen's Apple Juice from Wal Mart. It is pasteurized no sorbate. It didn't smell moldy
    and I got an airlock on it. I'll see if it starts to ferment over the next couple of weeks.

    With only 2 lbs. of honey per gallon you won't get a sweet mead. I'd use 3 lbs. per gallon or
    more. Also, use a yeast nutrient to help the yeast along.Vic

    Try back sweetening with lactose sugar (milk sugar), it is not fermentable by yeast. That way
    adding it with a priming sugar you get both carbonation and sweetened cider.Vic
