If your using dry yeast I would using something clean like US-05, you dont want to many flavors
getting in the way of what your trying to do. Also, I would up the hops! I would at least
double the lat...

Looks good. I have never used crystal hops before have you? Only thing I would change is the

IN regards to the mash out i dont seem to be have problems with efficiency. The mash out is
usually to stop the enzymes. Why is it a key step?

well i just use one hand to hold the top of the bag. And the other hand to squeeze it inbetween
my hand and forearm. Then I yell ow ow ow, thats hot. (its true):)
