    Been looking into buying a PH meter. Lets hear some Pros and Cons of meters curently on the
    market. Or are the PH strips worth going with?

    I use the Cali. and the American Ale yeast as well. Try the American Ale. Like Zen said add
    some wheat, or some flaked oats works for me. Or mash around 154.

    Started adding 10% flaked oats to my Wit and it made it..... I guess you could say
    creamier..... its hard to describe, it just made the final product better. I already use 50%
    wheat in my Wit and tone...

    I make 20 gallon batches as well. I use 16 3/4 lbs barley and 16 3/4 lbs wheat. I mill the
    wheat with the barley and mash at about 151 152. I never have used rice hulls and have not had
