From personal experience I ferment the wizen yeasts at about 62F. It's counter to most of the
conventional advice but works will for me as far as ester profile goes.

If you're taking about La chatlier's (sp) principle that wouldn't apply to fermentation.

A beer doesn't have to be completely infected for me to dump it. If a beer doesn't come out the
way I want and I dont think I can drink it all/get rid of it to friends it goes down the drain.

rinse with water and then rinse with starsan right before filling. Left a 1.045 beer on the
