Why is the bottling volume only 3.5 gallons? I was thinking about making this and noticed the
volumes. If I wanted 5 gallons in my keg then would I need to up the recipe?

No, not a good idea if you're going to eventually bottle it. You don't want to prematurely stop
fermentation until the yeast have consumed all of the fermentables, otherwise they could come

Well I just checked my gravity after being in fermentation for 10 days and it's down to 1.015
