Just started a batch a couple week ago. I used less sugar the gravity was only a 1.045. I

Taste could be cause its only three weeks old, give it a little time probably allright. Any
fermented beverage will taste off when its still young.

Looks great the only thing you made need is some pectic enzyme since you boiled the fruit even
for a few seconds it could still be a pain to get it to clear. I wouldnt worry about campden at

Yes the Safale S-04 will make krausen. I used a six gallon carboy and filled it with five
gallons of cider pitched yeast and the krausen crept up to the airlock, I didnt need a blow off

Yep but have to wait for fresh honey, last year I started a blackberry bush so thats what Im
probably going to make. It just sucks to lose six gallons of goodness.
