I brewed my first extract in the spring of 2009. While making the occasional extract brew I read voraciously on HBT as I was fascinated with the process of AG, keezers, HERMS, yeasties, etc. Come fall of 2010 I went AG. I've made a few of EdWort's recipes, a couple of clones and have recently been experimenting with a few recipes of my own to see what happens when I play god with the ingredients. I am building up my 10g HERMS system.

Mmmm - looks like the same specs I got from the brewer @ Bell's. He said it is happiest around
72degF...And they use their house yeast on quite a variety of styles.What is your timeline for

I would flip the manifold over so the slits are on the bottom. With them on the top you will
have the full weight of the grain pressing on them potentially creating sparging challenges.
