I find that normally my beers improve with a couple of months aging in the keg in the chest

Accuracy within 10F is fine. I would check the reading in boiling water (should be 212F if

Ok, I see where I went wrong here...I didn't have DAP and used Baker's Ammonia instead, but

Where in recipe #5 does it mention Ammonium Carbonate? It's akin to sodium carbonate (washing
soda) and very alkaline. It may cause an entirely different reaction mechanism. Perhaps you've
