  • I finally got into brewing in the winter of 2012. Thank goodness I live 10 minutes from Midwest Supply! My set up is limited to extract as of now because we are in an apartment. I have a 7.5 gal pot and plan to give PM brewing a try soon. So far I've done everything from Yooper's DFH 60 minute clone to session beer kits from Midwest.

Results from oak aging:Starting with my variation on this recipe, I aged this in a carboy with
3 oz medium toast American oak cubes for 5 months. The results are delicious. It tastes like an

You guys are really missing out on some awesome beer by discounting the Summit hop. I couldn't
pick up any onion at all when I've used it.

I'll second Radical Brewing. That is an excellent resource. Another that I find myself
reference quite often is Brewing Classic Styles by Jamil. Its a great light guide to the major

  • Posted in thread: How long do you dry hop? on 04-18-2014 at 08:10 PM
I go 48 to 72 hours. It helps to cold crash for a couple days before dry hopping. The yeast
particles in suspension attract the hop aroma chemicals so it helps if the yeast is dropped
    from suspension ...

Have you guys tried adding peppers to something like a saison or a lighter beer of some sort?
I'm just curious about other options besides porters/stouts. There is always a steady supply of
    serrano pe...

Really great work! The finished product looks like something right out of a furniture store!

Lower the temp of the fermentor. Swamp cooler, Fermentor in another tub, add water and toss in
some frozen water bottles, 72f. is too high for me, I like 60-65f.+1Fermentation temperature

  • Posted in thread: Boil time with late addition? on 02-19-2014 at 02:36 PM
How are IBU and hop utilization affected by the stalled boil? My worry is that even when the
boil has stopped, hop utilization continues. So if I stop the timer to wait for the boil to
    return would I ...

Citra is a fantastic bittering hop. I've used it several times with excellent results. Late
additions tend to be on the fruity side with stone fruit/mango dominating the flavor. My

What is your FG? What was the grain bill/recipe? How does it taste?I've used this yeast lots of
times. It is a fantastic workhorse and is probably OK to bottle after two weeks assuming FG is
