    I will say, let it carbonate at the serving pressure, don't force carb at 30PSI. I have noticed
    that on the beers I rush carbonating, the head's bubbles are looser and fade much more quickly.

    You will want to cover the door with something though, so you don't oxidize your beer by
    light.That's never an issue with wine, because a little oxidation is good with a great wine.

    The 55k burner will heat 14 gallons of water from 70 to a boil in 1.5 hours with a properly
    sized orifice. Since you're doing 5 gallon batches it should be more than plenty.

    That's not a bad start, but I know myself. And myself will not be happy with a halfway solution
    when I know I want to motorize whatever mill I get. Need a gear motor.
