- I've been brewing since January of 2010. My wife bought me a "Mr. Beer" kit for Christmas and created a monster. I currently use a hodge podge 2 Keggle Boil/HLT and 150 qt cooler Mash Tun system and currently do 10 gallon batches. I am slowly working my way to a HERMS system with a stand. I like to build my own gadgets when I can and try new methods. I built my own Keezer and have fermentation freezer with a digital Johnson temperature controller. Barleywines, DIPAs, IPAs, and Oktoberfests are my favorite beers. I am currently a member of the Brandon Bootleggers Homebrew Club in Brandon, FL.

I think I would pitch additional yeast. The slury may not have had any viable yeast cells left
in it. I don't remember the ABV of apfelwein but at 14 days of storage and 11% ABV, according
