I made this recipe a year ago. The yeast stalled out at ~1.010, so I didn't sorbate and

You stir the must of a fruit wine because that keeps the floating fruit wet. If the tops of

Got a batch of this aging now... at it's last racking I gave it a taste, it's crazy good. It
stalled out at 1.010, right where I like it. Might bottle it in a few months if I can stand it

Filled up my 75 page spiral notebook I use as my batch log. Wouldn't you know it, my 75th batch
was yet another batch of Apfelwein! 23,220 + 6 = 23,226.

I ferment everything at 75F. Some yeasts don't mind it higher or lower, but all the ones I use
like it at 75.

Yeah, I was impatient and rushed my first few batches. My first mead was in 2ndary maybe 2
months. I bottled it when it was clear. Still came out really tasty. It's a year old now, we
cracked a bottle...
