So I built Poptart's setup and hard-wired everything works great. Unfortunately, the heat port
in my STC1000 isn't sending power so I need to order a new one.

Safale S-05 not sure why. Seems to ferments cleanly in my 68 degree basement. Use it for IPA's
and American pales, which are 50% of my brews. I use Notty for stouts and such but I am afraid
    it will gi...

You waited a whole day for it in the fridge? I'm pretty sure I toss my first in the freezer
with a wet towel around it and pounded it 20 minutes later! Way to go!

I heart Nottingham. It's clean and allows hops to shine in IPAs and malts to shine in stouts.
It's cheap and it's easy (no starter... just pitch another $3 pack). What yeast do you find
    yourself gravit...

I've actually got a spare STC1000. In fact, I think I have all the parts I need minus the
plastic T to put the heat probe in.

Yep. Made the fortification calculation last night. I'll be adding the brandy with the oak
    later this week. Thanks again!

I've got almost everything I need to build Poptarts's HERMS system and it sounds like he's had
good success. If I decide to later switch to RIMS, I appreciate all the info!

If you are not stuck on rims i would highly recommend my 50$ HERMS system in my signature.Looks
like your system is near flawless and the added benefit of having a free sous vide is nice
    too.I have a ...

I'm not totally sold on RIMS. I've just researched it more than HERMS. $50 sure sounds
attractive though and I could probably do it a lot cheaper since I already have a 1/2" x 50'
    immersion chiller an...
