  • I've been brewing off and on for about 8 years, but I've been brewing a batch every 4 weeks for the last 2 years or so. Just started all-grain brewing finally in June 2012. This has been my goal for a long time; to drink 90-95% homebrew. Saves a lot of money (well, if you're just talking ingredients, I try not to think about the equipment investments I've made) but more importantly it is incredibly satisfying to create my own beer. Beers that I feel measure up to quality beers you find at the store. I'm also getting into mead making, with 4 separate gallons so far.

I would give it a go with all Centennial, can't be bad. I am still waiting on my Citra batch to
be ready but I'm going to brew it again and hop it like an IPA with all Cascade.

Well mine is down to 1.002. Added 12 oz honey after 6 days in the primary. Will probably
transfer in couple days to secondary, and dry hop with 1 oz Citra. I tasted my hydrometer
    sample today, and it'...

I like my IPA grain bills to be rather simple. 2 row, 8 oz of carapils, maybe some Munich 10,
anywhere from none to 12 oz, just depends on my mood, and that is really all I use. I like 0.4
    - 0.5 oz of...

I got my first batch of this into the fermenter today. Some modifications... I used Centennial
@ 60 and Citra @ 10 and 5. No pepper. Adding honey when primary starts to slow down. I'm
    probably going t...

Alright, I'm doing this within the next week. All Citra hops and I might omit the honey.
Depends on my OG. I'll add at the end of primary if I use it. Gonna make my starter of 3711
    today.

Well, I will ride this gallon out obviously, and backsweeten. Also adding vanilla bean so
hopefully it will be pretty good anyway. I'll get something else for my other 2 gallons.
    Thankfully Lalvin yea...

Why do you guys say not to use EC1118? I just started a gallon of mead with that yeast and I
have 2 more packs of it I was planning to use for 2 other gallons. I planned to backsweeten
    them all.

I made my first batch of this 3.5 months ago and its finally cleared and starting to get
drinkable. Still hot but I think another month or so, bottled and chilled it will be ready for
    consumption. I d...

So yesterday I ran out of CO2. This was pretty surprising to me because I just got a refill 2
kegs ago. The tank before this one lasted for 7 or 8 kegs... Two variables are that I got a new
    regulator ...
