  • Quite new to homebrewing but enjoying it very much. I started with two extract batches and quickly sought out a more 'hands on' approach.

    I'm currently experimenting with the Brew in a Bag (BIAB) method due to it's simplicity (both in clean up and necessary equipment).

    I'm looking to join a homebrew club sometime in 2012 to learn better practices and to seek out others with similar interests.

    Your approach seems fine, but it will add a significant amount of time to the brew day. Are you
    opposed to beefing up the gravity by adding some DME?

    Let it ferment out -23 weeks, then rack it to secondary onto .5 oz of French oak and 1 cup or
    two of Pinot Noir. Leave it along for 6-12 months before adding the sour cherries, that will
    give the bugs...
