I used 3711 for my saison twice with great results each time. Highly recommend the French
saison yeast. No stuck ferment and sat at 80 degrees in my fermentation chamber for ten days
then ambient (70)...

67-68 degrees ambient is too warm for the active part of primary fermentation. The beer temp
will rise to 6-9F HIGHER than ambient which means you may be fermenting at 74-77F which is way

You could still boost the alcohol content by boiling some DME in water, chilling, and then
pitching directly into an active fermentation. Can't say it will do much for the flavor though.
