  • Started brewing in Sept 2008 and can't wait to get more into the whole grain brewing. I would like to raise my own hops eventually. When I travel I like to take a photo of the beer I drink where I drank it especially when I was in europe. great beer great location

  • Being a good Catholic boy my parent sent me to a Catholic school where we learned the normal things you learn in school reading writing and of course Science. Now most of the 8th grade students did their science projects on volcanos or weather but Mark K. did his on wine making (and the nuns let him do it). For a good clean cut catholic kid this was exciting. How to turn grape juice and yeast into wine (without divine intervention) so even though I wasn't drinking at that point in time It was exciting to think I a catholic alter boy could be a bootlegger.I did try to make it at home what a nightmare. I made it without my parents knowledge and capped it with a balloon as Mark suggested in his science project. I then put it in the rafters to ferment. All was well until(this is true) we were sitting about to eat and we were saying grace and I heard a pop and I knew what it was THE BALLOON! It popped and wine was spilled in the rafter and walls.     Yes the beer taste great no infections I can tell. some of these are a minimum of 6 weeks
    fermentation up to 9 months since bottling. along the way it has been consumed a bottle or two
