    If you leave it mashing overnight, there's a good chance it will break too much of the sugar
    down to fermentable size.

    Mashing overnight is okay in certain circumstances, I've definitely considered it. A low body
    beer like this, probably fine. One with lots of body, though, I wouldn't suggest that.
