Trying to use beersmith to convert this to extract with steeping grains.Any idea what to do

How about connecting the temp controller to a probe in a thermowell. That way the fridge will

One change i would make to your wiring is to connect the middle terminal on the Potentiometer
to the unused one. all this would do is allow the stir plate to function if the Potentiometer
