Maybe not what you're looking for, but starting with 1-gal all-grain batches really helped me
understand the process while not wrestling with the equipment. Did it all on the stovetop.

If nothing else, you're confused about some terminology. You say you neglected to take an SG
(Specific Gravity), but you used a refractometer. Did you take a reading or didn't you?Then you

For what it's worth, my WHHA after 2 weeks in the bottle has some head. Minimal, but about what
I'd expect after 2 weeks. (Also Northern Brewer kit)105639

If your 1 gallon Carboy has a concave bottom, the bar will probably slide to the edge and not
spin. I know both of mine have that, which is why I ended up getting a 2L flask.

I brewed this about a month and a half ago and opened the first one yesterday. I did both
coffee additions, and I don't feel it was too much. I reduced the base malt to 14lbs, and ended
up at around 7...
