- I fermented my first hooch concoction in 1986. This was the dark ages of brewing for me. I learned a lot in those early sessions. In the early 1990's I began brewing quality beer from ingredients bought at my LHBS outside of Baltimore. By the mid 1990's I was brewing up some good quality brews with some real experimental brews after discovering Belgian beers. My brewing carrier came to an abrupt end when I was deployed for Bosnia. The majority of my time in Europe was spent in Mons, Belgium where I study all of the delicious beer styles I could close to the home source. From Belgium I went on to Germany and then down to South America where I was surprised to find some of the tap beer in the world. After 14 years of glob trotting I finally made it home to the US and started up my craft again. Out of all of the beers in the world, I enjoyed the beers of the Rhineland the best and these are the beers that I attempt to emulate when I brew.

Both beers had a great taste, like largering and had great head retention and great head. I

I usually like to leave it on the yeast 4 weeks and age for 4 weeks, unless I am doing an real
