Just a quick note on cooling... If you aren't already, move your chiller around a lot (stir or
up and down), it'll speed things up and help you get closer to your tap water temp. I can get
it 80 when ...

Give it another 7 days or so. It could be done, or being very close to being finished, but more

No problems leaving it in the primary. A lot of people here (myself included) will keep it in
primary for 14+ days, then bottle/keg.

Also, nothing wrong with letting your very get down to temp overnight and then pitch in the
morning when the temp is spot on.

Fermentation might have been done, but maybe it needed a bit more time to clean up a bit. Give
it another week or so next time and see what happens.

I was always under the impression that the dry extracts could age quite well, whereas the
liquid Ines really need to be fresh... And I don't think I've ever heard of old extract causing
