The primary reason would be to avoid the potential for liquid in the control panel. If you do

Bad idea IMO... Simply because you will have no idea where your fermentation stands. I have had
some brews ferment out almost completely in less than 48, and some that have taken up to 4

I think you might have them mounted to the 'out' line, I'm pretty sure the inlet is the one in
