I agree with duboman; I often brew a California Common beer using 2112, ferment on the cooler
side for a month and bottle. It is one of my favorite and easily reproducible beers!

I would definitely go with actually only 1 oz of ginger. Better to use fresh as well. The
Ginger, I could see putting in a hop bag and in the primary. Less it more with spices. It is
