I found this page that made sense to me:
    https://byo.com/stories/issue/item/3170-stuck-fermentations-techniquesEssentially[*]add some
yeast nutrient[*]make a fresh starter and be sure to pitch it when...

So I made five gallons of hard cider a few days ago. I made a starter with Wyeast cider yeast
that lethargically bubbled up with activity. I didn't think anything of it and pitched it and
    called it a ...

  • Posted in thread: How to know if beer is infected? on 01-31-2016 at 06:48 PM
...Most of the time people think their beer is infected when really it's just green...or
they've never seen how ugly and smelly and nasty tasting fermentation can be initially, but
    then with time the ...

That's known as sugar wine. I actually haven't done this yet, but I was thinking about trying
it for both lemonade as well as a hard rootbeer. How high was the ABV of the sugar wine? And
    you didn't us...

I thought I'd experiment with fermenting the alcohol (water, sugar, yeast) and then
flavoring/backsweetening with lemonade. The higher pH along with temperature control produced a
    really mild, inoffens...

  • Posted in thread: Brewing with Corn Meal, lots of Corn Meal on 07-13-2015 at 06:50 PM
I do enjoy making Belgian candy sugar; I even add a bit of malt extract and a few drops of
strong lye solution, kind of like what this page describes, except I add the malt/yeast
    nutrient after the co...

Thanks for the info; sounds like surface area is critical for conversion with corn.I need to
use more rice hulls or do biab with corn meal or finely ground feed corn, but with more rice
    hulls the chea...

I think distillers get off easy using cornmeal because they ferment it and distill it without
separating the wort from the the grains. We homebrewers aren't so lucky. It was definitely worth
    a read tho...

The cereal mash isn't helping. When the corn gels it turns into like a chunky polenta, then
after a little bit the enzymes start to break it down and it loosens up a bit.I once had the
    genius idea to ...

How about trying BIAB?^^That's a really good idea, it would make clearing a stuck sparge a lot
easier I'd imagine. The more rice hulls helped, I was actually able to (very slowly and
    cautiously) lauter...
