    I don't believe this is a correct statement. The beer can only absorb up to the head space
    pressure. If you set it to 12 psi, the beer can not absorb more than that - it has to equalize
    with the head ...

    I like Olde School a lot. That being said, The best Barleywine DFH makes is 120 minute with
    about 5 years on it. AMAZING.I'd have to agree, DFH 120min is an incredibly complex and
