    ABOUT ME

  • I just want to make great beer!

    My current favorite: Arrogant Bastard

    I've also been liking most everything I've tried from Firestone Walker. Our local pub is Lengthwise, great guys there. A little further out is Kern River Brewing Company, their Citra is a thing of beauty.

  • Always enjoyed the idea of it, and now I'm doing it. I keep trying to improve with each batch. I can do it and so can you!
  • A stout or porter is definitely in my future. Also would love to have a crack at cloning Citra.

  • Only Apple Wine right now, maybe a holiday amber leftover.
  • 1. Arrogant Bastard Clone: Getting some green apple, maybe paint thinner aroma, hoping this settles out with age, it could just be young beer, if not I will chalk it up to oxidation/infection as it blew my airlock and was exposed to air for an unknown amount of time.
    2. Barleywine: Was having a lot of trouble getting the FG down, repitched yeast to no effect and finally dumped the whole batch on a yeast cake and that took it down just enough. The hydrometer sample tasted good, will taste it in a month or so.

    Pliney is a fantastic DIPA. But in the end it's still just a beer. And sure there are other
    equally good beers out there but then again I would say they aren't all that common either.

    After it slows done you can increase the temp slowly to help the yeast fully attenuate. I like
    to bump mine up about a degree a day after the first day or two until I reach a set point,
    usually 68/69 ...

    I would definitely drop the temp a bit, just not so much you shock the yeast or something.

    yes thats a crazy idea so dont do it just grab your carboy, move it 20 ft and put it in your
    fridge, swap blow of tube for airlock before or after, coldcrash for 2-5days then bottle or keg

    Your beer will ferment higher than the ambient temperature, so it would likely create cleaner
    better tasting beer. However your need for it may be less pressing than people who live in
    warmer climes.
