I think because of Belgian yeast attributes, to me anyway, Belgians usually have a bit of a
sweet/bubblegum fruity smell and taste. Did you use Belgian yeast?

Yeah measurements are by weight. My guess is 11 oz (liquid space) of grain might be just a
