    You could also force carb, but I imagine it would make a real sour beer if you base is already
    there. What would you buffer with?

    I use a blowoff tube for all my ferments. Good piece of mind and don't have to worry about
    drying out. Just make sure you switch to a sanitary air filter if you cold crash.
