    So if you do ferment too warm is the only repercussion a sweet tasting beer? And what if you
    just let it ferment longer?You'll get a bunch of fusel alcohol that'll give you splitting

    Ugh. I wouldn't use the bread yeast. But then, I wouldn't use an unknown yeast either. Good,
    known strains from Fermentis and Danstar are reliable and inexpensive. Easy to use as well.Rick
