    How did the batch with the sugar-free caramel syrup turn out? I'm considering doing something

    Has anyone added sugar-free caramel syrup after their cider has fermented dry? It sounds like a
    great way to add the caramel flavor without having to back sweeten/stove-top pasturize.

    Oh yeah, the rum is delicious. It's a spiced rum that is slightly sweet--maybe the sugar
    reacted badly with the oak chips? Hard to say.

    I don't know what particular brand they were, just French Oak Chips from my LHBS--never had any
    issue with "off" ingredients from them before. The rum was Tortuga Spiced Rum that I got in
