3 weeks is probably ample time as long as you pitch enough yeast. I would use dry lager yeast
if this your first go. Ferment temp will need to be controlled for the lager. Like around 50.

I personally would ditch the crystal all together. I agree on the late additions. When I do
Pils it only gets 60 min addition and then all my hops move to the final 5 min and whirlpool. I
    also do a lo...

I had the same thing happen a month ago. I had always used foil. I rubber-banded a paper towel
over the top and then used the foil. It still can breath and nothing can get in. Working great
    for me

  • Posted in thread: How long is your brew day? on 08-20-2015 at 02:04 AM
I brew outside. Have to set up and take down. I brew 12.5 to 15 gallon batches. It takes me 8
hours to brew, clean, and put away. I do 90 min plus mashes and 90 min boils. When I do get to
    brew, I'm n...

My favorite Brown yeast is 1450. It leaves a little mouth feel, yet attenuates fully.

I pressure can wort and it is as easy as dump and add yeast. Starters do make a difference IMO.

  • Posted in thread: is it too late for a diacetyl rest? on 08-10-2015 at 06:39 PM
I personally have found improved results when I transfer to secondary. I like to get the beer
off the yeast. I crash it at 32 for 3 or 4 days and then transfer. I have found that it gives
    me a cleaner...

IMO it wouldn't hurt, but not needed. I usually raise my temp for DRest when I hit about 80%
    attenuation.

  • Posted in thread: Side by Side Yeast Experiments on 08-04-2015 at 11:16 AM
I too brew larger batches. I split batches almost every time I brew. Amazing how different the
beers turn out. I haven't brewed with 001 in a while. I really like 007. I think I may split my
    IPA with ...

What was the date on the yeast? I've had older yeast take 3 to 4 days to get going. In these
events I would check your gravity first. If the yeast is slow to start and actually shows life,
    I would ste...
