  • I first tried making Apfelwein, but that got the funkies (Seabee John has posted about this). Then I tried a Pumpkin Ale, which got infected during bottling (is there a theme here?). However, my 3rd attempt, Octane IPA, was brewed, fermented, kegged and enjoyed without issue (aside from it being gone too fast!). For my next 3 attempts, I want to do a porter from an extract kit, and then venture into all-grain brewing with an oatmeal stout and then a Scottish Ale. Beyond that, I want to start brewing frequently enough that I have 2 tapped and drinking, 2 aging in the keg, 2 in fermentation, and at least 4 to 8 recipes I want to try.
