3724 is tough to attenuate out. I took mine to 87-90F to finish it out where I wanted (1.001)

If that's what your after I'd drop the carapils (mash a little higher to get the same effect)
and just do a Golden Promise and Mt. Hood SMASH. Wyeast NW Ale is neutral enough for that IMO.

Only one. Avery's "The Beast." (Aged in the store 2 years, 15% abv, an impressive looking beer)
Looking it up at the liquor store on my phone, it had great reviews on BA. I love Belgian style
