The idea is that you want to leave a controlled amount of sugars around for the bug/brett blend
to go to town and sour/funk before there's nothing left and it has to slowing eat thru the
longer chain ...

Really? That's the opposite of what most people say. I tend to think you get the most funk

You're using the Brett as a secondary strain so you dont really need a starter, you can make a
