I soured my saison made with belle with dregs from commercial sours- tastes fantastic 1 yr
later, gonna bottle half and add fruit to the other half.

I haven't even heard of Ella hops lol and I would try London ale III (1318) If the s04 doesn't
get you where you want the beer to be. I might put this on my list to brew too
