Brewing a slightly modified version of EdWort's Haus Pale ale this weekend. I've been tinkering
with the grain bill for 4 or 5 batches and this time I'll be subbing Victory for the Vienna.

Meh, if it was me I'd dry hop (in primary or secondary, whatever you prefer) while on vacation,
then bottle when I got back.
